June 1, 2011- “It would be disingenuous to the animal to not make the most of the whole beast” (Nose to Tail: The Whole Beast, By Fergus Henderson) . The Peekskill Brewery will be hosting its first ever “PB Pig Out” on Sunday, June 26th. Chef Sean Corcoran, a longtime fan of Fergus Henderson’s Nose to Tail: The Whole Beast is using this concept as inspiration to use every part of the pig and a create a complete feast with seasonal sides and Peekskill Brewery beers.
The event will allow for over 20 dishes to be made from the pig and served in a large picnic format. Tented tables will provide a relaxed and casual atmosphere to enjoy live music, eat and enjoy Peekskill Brewery beer from 1pm-4pm.
Corcoran will be available that day to discuss the dishes and his technique. “The idea is simple- paying tribute to the animal by using all of its parts- not just those that have been commercialized in our culture. This is going to be fun,” said Corcoran.
Tickets for the event went on sale Monday 30th and are $50 for beer and food; they can be purchased at The Peekskill Brewery. Tickets must be purchased in advance since space is limited and will sell out quickly. For more information please call 914-734-2337.
